L’Atelier de Joël Robuchon has well-selected its 4-course Discovery Menu with authentic flavor and various selections of the dishes. Keeping the signature dishes, Chef Francky chose LE POULET as the new dish for Discovery menu. Guests can choose their favorite food based on their own flavor. We never cease to meeting the needs of our guests.
On a bed of delicate crustacean jelly, well-selected and fresh Alaska king crab meat covered with Oscietra caviar are presented in the middle of the plate decorated with dots of cauliflower cream and parsley oil all around. As the iconic dish of Mr. Robuchon, this dish showcases the complex texture, well balanced flavor and magnificent presentation.
